Duck Fat Smashed Potatoes

Ingredients
- 2 lbs. baby or multi colored young potatoes
- 2 T water
- 3 sprigs of fresh thyme with leaves removed
- 2½ T duck fat
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp granulated garlic
Preparation:
- Place potatoes and water in a microwave-safe bowl. Cover and heat on high in a microwave until fork tender, about 8 minutes.
- On a sheet of parchment, smash potatoes to ¾’ flat using the side of a cleaver or any flat sturdy object
- Season both sides with the salt, pepper, and garlic
- Place duck fat in a cast iron skillet (or any heavy bottomed skillet) and pre-heat on med-high heat for 3-4 minutes
- Place each potato flat side down in the duck fat. Cook for approx. 8 mins until a crispy crust has formed, flip potatoes and repeat
- Remove from heat, salt to taste, garnish with fresh thyme, and serve
