Mediterranean Lamb Meatballs


This delicious lamb recipe comes from my beloved niece (and Rascak) Suki, known as our amazing family chef whose culinary skills shine! From gorgeous baked goods to sumptuous mains, Suki is an inspiration to everyone who knows her, and her happy place is definitely in “la cocina”. Magnifico!

Ingredients

  • Olive oil (for cooking)
  • 1 lb ground lamb
  • ½ onion, grated (use a box grater)
  • ½ cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, crushed
  • ¼ cup finely chopped flat-leaf parsley
  • 1 tbsp finely chopped fresh mint
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp cinnamon
  • ½ tsp cayenne
  • 1 tsp salt
  • ¼ tsp black pepper

Instructions:

  1. In a large bowl, combine all ingredients and mix well using your hands. 
  2. Form into meatballs—about 12 large or 20–24 smaller, depending on your preference. 
  3. Heat a splash of olive oil in a pan over medium heat. 
  4. Cook meatballs, turning occasionally, until browned on all sides and cooked through (about 8 minutes). 
  5. Transfer to a plate and let rest briefly. 

Serve with warm pita bread, sliced tomatoes, thinly sliced red onions, crisp lettuce, cucumbers, tzatziki sauce, and hummus.
